Minty orzo and peas

Minty Orzo and Peas

TIME: Prep/Total Time: 20 min.

This is also good served as a chilled salad.

Ingredients:
  • 2 cup uncooked orzo pasta
  • 2 small onion, finely chopped
  • 2 garlic clove, minced
  • ¼ cup  butter
  • 4 cups frozen peas
  • 2 teaspoon grated lemon peel
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • ¼ cup finely chopped fresh mint
Directions:

Cook orzo according to package directions. Drain and set aside.
    In a large skillet, saute onion and garlic in butter until tender. Add peas. Cook for 2 minutes or until tender. Add the lemon peel, salt, pepper and orzo; heat through. Stir in mint. Yield: 12 servings.
