Minty Orzo and Peas SERVINGS: 12 TIME: Prep/Total Time: 20 min. This is also good served as a chilled salad. Ingredients: - 2 cup uncooked orzo pasta
- 2 small onion, finely chopped
- 2 garlic clove, minced
- ¼ cup butter
- 4 cups frozen peas
- 2 teaspoon grated lemon peel
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- ¼ cup finely chopped fresh mint
Directions: Cook orzo according to package directions. Drain and set aside. In a large skillet, saute onion and garlic in butter until tender. Add peas. Cook for 2 minutes or until tender. Add the lemon peel, salt, pepper and orzo; heat through. Stir in mint. Yield: 12 servings. GG
