Big Cooking

If you are in the habit of automatically doubling all recipes in standard cookbooks, and if you make macaroni and cheese by multiple boxes at a time, then this section may offer some helpful suggestions. Recipes, time saving tips, ways to cook a lot of food efficiently, cost savings, and more.

I use a crock pot a lot. A 6 quart crock pot will make a nice pot of soup, which you can start in the morning with just a few minutes of time, and if you throw together a batch of no-knead bread or drop biscuits, dinner is ready with very little work.

I also have a Nesco Roaster. It is big enough to hold a large turkey, or a nice sized roast and potatoes. I really like it for holidays, because I still have the use of the oven for bread if I need it.

My other favorite appliance is a rice cooker. They are available in a 10 cup size, which will serve a pretty good sized family. You can cook white or brown rice in it, and you can even cook rice pilaf in it. For brown rice, you add 25% more water. For rice pilaf, you just add boullion, onion powder or dried onion, parsley, and some other dried veggies if you want them (about a tablespoon or so of each), and then two tablespoons of margarine - increase the water by 2 TBSP for every tablespoon of dried veg.

I use some foods that are commonly used for food storage, such as dried veggies. Dried onions are a great time saver, as are dried carrots, celery, red and green pepper, peas, and other veggies. They are an economical item also if you use them to hurry the preparation of healthy meals, instead of preparing quick fix.

No knead yeast bread is a fast way to get bread onto the table. It mixes up in about 5 minutes, you can let it sit for about 15-20 minutes, stir it down, and then dump it into a couple of pans. Let raise just a bit in the pans. Bake for 35 minutes and it is ready for dinner in about an hour. If I am in a hurry, I don't even bother to let it raise before baking, and it works nicely anyway.
